One (1) Salmon filet
Ground cumin
Cookies Flavor Enhancer
Brown sugar
Fresh Salsa:
2 seeded tomatoes, chopped
1 cucumber, chopped
1 green pepper, chopped
1 red pepper, chopped
1 medium onion, chopped
1/4 c. cider vinegar
1 T. cilantro
2 T. soybean or olive oil
Salt and pepper, to taste
Mix salsa together and let sit for 1 hour or more for the flavors to blend. Preheat oven to 400 degrees. Make sure the bones have been pulled out of the salmon. Rinse and pat dry. Season with Cookies Flavor Enhancer, ground cumin and brown sugar. Line a jelly roll pan with non-stick foil (or spray regular foil with oil). Put filet on lined pan, skin side down. Bake in oven at 400 degrees for approximately 20 minutes. Then broil for 2 to 4 minutes if you like the salmon a little drier. Serve with homemade fresh salsa.
