1 1/2 c. + 1 1/2 T. water (divided)
1/2 tsp. baking soda
1 tsp. Cookies Flavor Enhancer
1 lb. 85% lean ground beef
1 T. cooking oil
2 c. elbow macaroni
1 c. whole milk
2 c. shredded American cheese
2 c. shredded sharp cheddar cheese
1/4 c. Cookies Premium Salsa (mild or medium)
1/4 c. finely chopped dill pickles
4 T. Cookies Tangy Mustard BBQ Sauce
Stir 1 1/2 T. of water, Cookies Flavor Enhancer and baking soda together in a medium bowl until baking soda and Cookies Flavor Enhancer are dissolved.
Add beef to the mixture. Thoroughly combine and let sit for 15 minutes.
Heat the oil in a 12-inch broiler safe skillet over medium high heat until just smoking. Add the beef, break up with a wooden spoon or potato masher and cook until browned (6-8 minutes).
Add macaroni, milk and remaining 1 1/2 c. of water. Bring to a simmer. Cover, reduce heat to medium low and cook until macaroni is just tender (~5 minutes). Stir halfway through cooking cycle.
Stir in 1 1/2 c. of American cheese, 1 1/2 c. of cheddar cheese, 1/4 c. of Cookies Premium Salsa and 4 T. of Cookies Tangy Mustard BBQ Sauce until fully combined with macaroni and cheese is melted (approximately 2 minutes).
Take off heat and sprinkle remaining American cheese and cheddar cheese over macaroni mixture. Turn broiler on to preheat and adjust rack approximately 6 inches away from the broiler element. Slide pan beneath broiler until the cheese just starts to brown (~2 minutes).
Remove from broiler, let cool slightly and serve!
