6 large green peppers
1 lb. ground beef
2 T. chopped onion
1 c. cooked rice
1 ½ c. Cookies Sweet ‘N’ Spicy BBQ Sauce
½ tsp. Cookies Flavor Enhancer
Shredded cheddar cheese (optional)
Cut tops off peppers; remove seeds and membranes. Add water to cover peppers and boil for 5 minutes; drain. In a large skillet, cook ground beef and onion until meat is brown; drain fat. Add rice, 1 cup of the Cookies Sweet & Spicy BBQ Sauce, and Cookies Flavor Enhancer; heat through. Stuff each pepper with ½ cup meat mixture. Set peppers upright in a 3-quart baking dish; pour remaining ½ cup BBQ sauce over peppers and top with shredded cheddar cheese if desired. Bake, covered, in a 325 degree oven for 30 minutes or until heated through.
