1 medium onion, chopped
2 T. minced garlic
2 T. cooking oil
6 c. chicken broth
1 T. Cookies Flavor Enhancer
1 tsp. dried oregano
1 – 19 oz. can cannellini beans (white kidney beans)
1 – 4 ½ oz. can diced green chilies
1 c. Monterey Jack cheese, shredded
4 c. diced cooked turkey or chicken
Chopped cilantro, sliced scallions and shredded cheese
¼ c. Cookies Premium Salsa
Sauté onion and garlic in oil. Add broth, Flavor Enhancer and oregano; simmer for 5 minutes. Add beans, green chilies, Monterey Jack cheese and meat. Cook for about 10 minutes more. Put in a bowl; top with cilantro, scallions, shredded cheese and salsa.
